Looking for a comforting bowl of soup on these chilly evenings?
I always turn to one of my favorites. Kale soup. Healthy and delicious, packed with flavor and taste.
Kale Soup Recipe:
Ingredients:
- 1 bunch of fresh kale, stems removed and chopped
- 1 onion, finely chopped
- 2 carrots, peeled and diced
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) diced tomatoes, (I don’t drain)
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese for serving (optional)
Instructions:
- Prepare the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
- Add Garlic and Spices: Stir in the minced garlic, dried thyme, dried oregano, and smoked paprika. Cook for an additional 1-2 minutes until the garlic becomes fragrant.
- Incorporate Beans and Tomatoes: Add the cannellini beans and diced tomatoes (with their juice) to the pot. Stir well to combine the ingredients.
- Pour in Vegetable Broth: Pour in the vegetable broth, (sometimes I add a vegan bouillon cube) bringing the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes to allow the flavors to meld.
- Add Kale: Add the chopped kale to the pot and simmer for an additional 5-7 minutes, or until the kale is tender yet still vibrant green.
- Season to Taste: Season the soup with salt and pepper to taste. Adjust the seasoning as needed, keeping in mind that the flavors will continue to develop as the soup simmers.
- Serve: Ladle the kale soup into bowls and, if desired, sprinkle with grated Parmesan cheese for an extra burst of flavor.
